OKay, for the tzatziki - go to kroger and buy one tub of stonyfield organic greek style yogurt. It's in their organic section. 32oz tub, the big one. It has a red lid. If they happen to be out of that brand, get something full fat and greek style and 32oz. That makes a shitload of tzatziki, but it's the easiest way to measure and it's only about $3.50 so not too bad. While you're there, buy a clove of fresh garlic and a cucumber, a package of pita bread, a small thing of olive oil (since i know mammaw doesn't keep that), in the spice section a shaker of Cavender's Greek Seasoning, and some boneless, skinless chicken breasts. Oh, and tomatoes.
For the chicken, just throw it in a crock pot with a little olive oil and cover it good with the Greek Seasoning and turn it on low for a while. IF you don't have a crockpot then you'll need to do the chicken in the oven, just put it in a pan and cook it on low for a while. It's better in the crockpot though, and easier too.
For the tzatziki - you'll want to peel the cucumber adn then use a grater (like a cheese grater) or a food processor to shred it up real fine. Then take the shredded mush in your hands and squeeze out as much water/liquid as you can. Then, take the garlic and use about 4 or 5 cloves and mince them. Ask mammaw if she has a garlic mincer, she may not and you may just have to chop them up as fine as you can by hand. If so, just smoosh them up as best you can with a knife - about 4 or 5 sections of the clove of garlic. Add this to the smooshed cuke, and then add the yogurt. I use nearly a whole tub, 3/4 plus a little. Mix it up and add just a touch of pepper and then let it sit for at least half a day. It will be much better the 2nd day.
