2 cups flour
1/4 c. sugar
2 tsp. baking powder
1/8 tsp. salt
1/3 cup cold butter
1 egg
1/2- 2/3 c. heavy cream
1 tsp. vanilla
1/2 cup mix-in of choice (we like mini-chocolate chips best, but I've done a bunch of different things, white choc chips and craisins are good too. They are also delicious plain)
Plus 1 egg and 1 TBS cream for egg wash
Mix the dry ingredients, then cut in the butter and mix it until it's kind of sandy to pea sized butter chunks.
Add cream, egg and vanilla plus 1/2 cup of whatever mix in you want. Just mix until combined, don't overmix.
Pat into a disk shape (maybe about 8"-9" diameter, I'm never exact)
Brush with 1 egg mixed with 1TBS cream. (if I'm only making one batch, I usually just brush with cream to avoid waste and it's fine)
Then cut pizza pie style (6-8 pieces depending on size you want) and freeze ( freeze on baking sheet and once solid transfer to bag).
Bake (directly from the freezer, frozen solid) at 375 until done and browned, about 18-20 minutes.
You can play around a lot with the mix-ins, just avoid anything too wet. I have also subbed part of the white sugar with brown sugar and added cinnamon and they were super yummy.
